I had a hankering for hummus the other day, but only had dried beans on hand. I didn’t feel like waiting for them to soak and then cook, and in the fridge there were about 10 red peppers, so I decided to come up with something that would use some up. I looked up a few nut paté recipes in the original Moosewood Cookbook, made a few modifications, et voilà – delicious paté that I couldn’t stop eating…directly out of the food processor!
Red Pepper Cashew Paté
1 red pepper, diced
1/4 red onion, sliced
1 cup cashews (I used raw but will try roasting them next time)
1/2 lemon, juice and zest
1/4 cup goat cheese
3 Tbsp grapeseed oil
salt and pepper to taste
Sauté red pepper and onion in 1 Tbsp of oil until soft. Allow to cool slightly, then transfer into bowl of food processor. Add remaining ingredients and pulse until desired consistency is reached. Serve with chips or veggie. Make a large batch then package and freeze!
Happy cooking!
Jacinthe
