How to Roast a Pepper

Roasting peppers is super simple with super sweet and flavourful results. Once you know how, you can make them all the time to use in anything from hummus to soup and pasta salad to paninis!

Wash your pepper of choice (orange, yellow or red work best).

Place on your *gas* burner and turn the heat to high. (This technique doesn’t work well for electric stoves. I’d put your peppers on a baking sheet and blacken then under the broiler.)

The pepper will start to blacken. Turn with tongs every few minutes.

Still needs more time!

Once it’s as black as can be, transfer to a bowl.

Let it rest, covered with plastic wrap, for about 15 minutes, or until cool enough to handle.

After going to put a load of laundry in, it’ll be ready to peel. See how the skin has loosened from the flesh of the pepper?

Start pulling off the black bits.

They come off very easily!

All clean!

Pull the core and all the seeds out.

And there you are! Delicious roasted pepper to use in your favourite recipes.
